Turga Parsnips are an amazingly vigorous hardy annual with large, heavy, 10-12 inch roots. They keep well and have a nice sweet, nutty flavor.

Parsnips are a great root vegetable that have been cultivated since ancient times. They are an excellent source of vitamin C, folic acid and are a good source of magnesium, niacin and potassium. We love them roasted with olive oil and eat them all winter long.

{ planting instructions }

Sow seed directly as soon as ground can be worked. Parsnips require light, deeply cultivated soil cleared of stones. Lightly cover with compost or soil at a depth of ½ inch. Thin to 4-6 inches apart. Full Sun. Moderate water.
100-110 days.

{ harvesting }

Roots will be ready for harvesting in autumn. They can be left in the soil all winter, which makes them sweeter, lifting as required. It's best to mark each plant so that it is possible to find them once the foliage has died down.
